Longtail Gar
Pretty sure they are longtail gar (shorter bill and more slender than the robust {storm} gar). Not sure about eating quality but the longtail are usually a bit cheaper than the southern and robust at the fresh fish auction, although they are generally smaller which maybe why the market price per kg is less.

Fingers crossed
I'll be catching them off the beach in front of camp in a little over two weeks. We don't take big frozen gar up there anymore for sails, use the local caught stuff. What rig are you using, Russ? I used to catch them when I was a kid, have played around with a few different rigs up there. Settled on a pencil float, no lead. 1 #12 gamakatsu in front of the float, one behind, they just hook themselves. Tiny bit of squid, or mackerel/tuna belly.

Just using a normal float
Just using a normal float with swivel stopper. Roughly 800mm to a dropper loop for first hook then another 400 to the bottom hook. Just using a size 10 long shank with squid . They go nuts

Talking about going nuts
Many years ago catching long toms in a tinnie I lifted one inboard only to have it drop of the hook into my lap and then into the bottom of the boat.
Plenty of excitement all around I can tell you
