Baking coral trout whole

 G'day guys,

 

I've done some research on google and it says if baking a fish whole in the oven when wrapped in foil, a general rule of thumb is 15 mins per half kilo. That sounds like a lot? 

 

Ive bought a nice 3kg coral trout and the thought of leaving it in the oven for over an hour worries me.

 

is anyone able to offer some advice on this? Id hate to over cook such a nice fish.

15 per kilo is more like it

 But even that can make the smaller fish a bit dry 3 kilo I would do for 1/2 hour

hey mate, pm me your email and ill send you a recipe. I went to a cooking class last year on fish, and i was given a killer recipe for baking whole fish. I practiced it on a coral trout up in exmouth earlier in year and everyone loved it...  and it wasnt covered in foil, left open but sitting on a cake rack so the air can circulate (that way you can see how its cooking and wont over cook it either) . Another important thing was to cut 3-4 (depending on size) diagonal slashes into fish on each side- this makes it easier to see how cooked it is but also ends up being the size pieces that people cut of the whole fish. Rule of thumb is whole fish approx 25-30 minutes per kg based on 180 degree oven. And make sure the fish is room temperature before you start!

i did find that the 25-30minutes per kg that they recommended was also a bit too long, just depends on how thick the fish is also, but coral trout wouldnt be quite that long, thats why you keep an eye on it.
