bleeding sharks

hi Guys

caught a nice little gummy today and was wondering whats the best way of bleeding them. all i did was cut its throat and definned it is that enough.

as i was filliting it i noticed a smell from it im guessing its ammonia is that from not bleeding it properly or is it in the flesh.

We bleed them then once dead trunk (off with head, tail & fins). Place a hose where you have cut the tail off and force water up the centre  of the shark. All the ammonia will come out the head end. Can be done with deck wash or at home. You'll be amazed how much comes out. ALways good practise to dispatch any fish quickly.

Wait no more, having done literally thousands of them all it takes to clean and remove the backbone is approx 70 seconds on a 1.5 metre shark.

Cut a slit in one of the belly flaps so it gives you a good hand hold on it and rinse it in the surf, making sure you drag it in a head first direction to force water in to the cavity.

Nothing worse than a smooth skinned bronzie slipping out of your hands while washing it

The only way is to kill it by cutting straight across where the back of the head meets the spine, and clean it as soon as possible, like straight away.Usually there is a slight crease in the skin if the head is bent back a bit to indicate where to cut.

 

The brown line that runs between the innards and its backbone is where the ammonia comes from and must be removed quickly if you want the best results. Cutting the fins off removes the handles that make carrying them easy, they do nothing  towards improving or causing any detiorating of the flesh.

Cutting the tail off is one of the best ways to bleed it but it makes a mess as its like a water pistol and sprays blood everywhere you don't want it to go and if you are going to clean it asap all the blood is going to leach out anyway.

Once you have the guts out and the tail off , hose out the little hole that runs down the centre of the spine from the tail to the back of the guts cavity below where its bum was situated to get rid of any blood left in it.

i just cut the fins off and the tail and i found it all pumps out.but i've always been keen to find a way so they dont suffer.i've always felt sorry for the poor little pricks doing that way.i find putting them in the freezer for a couple of weeks helps too.

All shark fillets improve if you freeze them for at least a week, it tenderises them and they aren't so chewy.

The ammonia smell is only there if you haven't cleaned it immediately after capture not leaving it in the ice box untill you get home.

 Back of neck, each side of the spine there is two main arteries. Slice those. Hold it vertical by tail and let gravity do its thing. Easy as. Cut the tail off if you must, helps blood flow better. Not really required though. 
Salt water is an anticoagulant too. Helps when you're out on the boat. Beach I don't bother hanging em in the salt. 
I never have blood in my sharks either.

Gut, n fin, n clean asap once heart stops pumping to minimise ammonia build up.
