As far as filleting Mackerel goes, I've always found filleting a side off pretty easy (nowhere near as easy as the guys in the video I must add) but skinning them a pain in the backside!
Last year I got some great advice in regard to filleting/skinning mackerel and while I don't catch them often, it makes the whole process heaps easier and faster.
Here's the advice I got... Fillet a side, cut it in half horizontally and remove the lateral bloodline/bone sections while you're doing it. Once you have your two long fillets from a side, forget about trying to skin the whole thing. Take one, start at the tail and come in an inch or so (whatever thickness you want your fillets to be). On a flat surface, cut straight down till you hit the skin, then run the knife back towards the tail, skimming the skin as you go. Repeat the process, down at a fillet's width, then back towards the tail, etc, etc.
No doubt many already know this technique but if you are like me and consider yourself a reasonable filleter of fish but have always been frustrated by the skin on mackerel, give it a go, you'll be amazed at how easy it makes the process.
Rod (Rocket) is Darwin based but fishes out of Broome in season.
Was having a beer with his dinghy guys and they were talking about the magic mack a minute barrier. They are out for an hour at a time in the tenders before they come back to offload and I think the record was about 57 macks in the hour. They all had been up in the 50's on multiple occasions.
