I never bother scaling or gutting as I cut the fillets just under the rib cage and I skin them so a bit of time saved there :p
But really, how many fish are you catching that you are considering commercial machines?
Id work on streamlining the process first if you're in that much of a rush (or get back earlier). All scale til ones done then you work on the filleting. Use those scaler tools rather than the back of a knife. The key to doing it fast is to minimize all steps (and have ultra sharp knifes). E.g. Separating the stop part of the fillet should be max two strokes. Bottom, only one. If not cutting around the ribs then slide the fillet to the next person who removes the bones then portions them. By that time the scalers should be done and one can bag and one can vacuum.
If you need a demonstration let me know when the weathers good next ;)
Although you could always do what they do in business: subcontract it out. Line up someone or two who can't get out to meet you at your house to do the filleting in exchange for a few fillets and kick back and have a beer ;)

mate your the one jumping to conclusions I never accused anyone of doing the wrong thing I merely asked whether you where a pro or rec fisherman as "60 to 80 bags full of fillets" is a lot of fillets in anyones books if you put two fillets in a bag that equates to 30 fish
40 if you have 40 bags, perhaps you should have made yourself a little clearer. staement like " I like to head out 100k's or I like to leave the skin" on suggests your on your own and dont blame anyone for being a little sus on what you posted

I don't know the guy, but you are in the wrong ff.
take a look at his avatar photo.... that's a big boat, and straight away I concluded that he is obviously into deep water stuff.
he is dead right, if 5 guys catch (average) 2 x 20kg fish each, and get 10kgs of fillets off each fish, that would be put into kilo bag portions equalling 20 bags each guy.
2 fillets only equals 1 fish if you fillet at sea. it does not make a lick of difference how many bags of fillets you have at your place of residence, as long as it does not exceed the 10kgs demersal/10kgs pelagic limit per person.
power to you snuffs, if you have the resources and know how, to go get a bag of deep drop fish, and also take the time to maximise your fish's eating quality.
but the fact he states he's catching a lot of big fish and talking about commercial proccessing equipment gets the alarm bells ringing in my opinion....and we all have them.

with that number of fillets surely you cant be a rec fisherman
and if you are where are you fishing that would allow that amount of fish in a day...something smells fishy here!
