Boil with head on or steam
Boil with head on or steam with it off. I always boil chuck crays in, bring back to boil and 8 mins for a size cray. Larger one's need more time.

BBQ the things, best way to eat crays by far in my opinion.

Boiling seafood
When you guys boil seafood, does it taste the same as other methods of cooking? Eg: steaming
I don't boil seafood anymore because I find that it loses some of the "seafood taste". I either steam, grill, bbq or batter fry.
Not saying that theres a correct method, just from my own experiences.

Imo nothing like a good feed
Imo nothing like a good feed of fresh boiled crabs at the start of the season. Once I get a few feeds of them in then I start to experiment with the steaming and chilli crabs. As for cray don't really rate them.

Don't boil them
do your eat your chicken by boiling it? I don't
1. Cut the tail from the head by running a knife at a 45degree around the cray with the tip of knife pointing into the head
2. Butterfly the cray tail but be careful not to it your finger Tips off
3. Cut each butterfly half into three pieces
4. Dip each bit into flour dusting off excess
5. Dip into egg
6. Roll in Panko bread crumbs
7. Cook into vege oil at medium heat till golden
8. Put on paper towel to cool
9. Serve with some Japanese Mayo or your fav secret sauce
10. Wash back with Sapporo or Kirin.
Once u have mastered this you'll never boil them again
let me know how u go

Nothing wrong with boiling
Nothing wrong with boiling when fresh. Fresh crabs are insane when boiled fresh. There are many methods of cooking cray which I think is the beauty of these bugs. I personally cannot wait to crack some fresh boiled cray legs and tail dipped in white vinegar.

To paraphrase jackfrost
Crays are for eating, crabs are for stuffing around picking out tiny pieces of flesh and throwing 90% of the creature away as waste. Don't rate'em, just IMO, of course (runs for cover)

On a more serious note
8 minutes on the boil is a good number if you are eating fresh. If you want to boil and freeze, you need to boil a little longer. Notice how you can sometiimes get a black patch on frozen cooked? This is from not cooking long enough, which is why they have to cook the commercial catch a lot longer, mandated by regulation, IIRC. Me, I'm quite happy to freeze green and barbeque later, or cook and freeze if you want to give some away. Tails actually microwave well, used to do it on the boat. Can't remember how long, maybe 5 minutes?

cray recipe
Remove meat from cray and cut into small pieces/cube about 20 cents in size.
Microplane fresh garlic in a frypan with(equal amounts) butter and oil 2/3 TBLS
cook till meat just turns white(stirring as you go)
Place in bowl with Paper towel.
Can be put with salad as main or
on table with a selection of dipping sauces :ie sweet chilli, wiltshire etc.
Or freeze to reheat at a later date.
