Crayfish today

Went for a solo dive today as I couldn't get anyone at late notice. My work mate Joe Amato maned the boat while I was down. The wind was strong first thing this morning which I thought it was going to be hell underwater with surge, but surprising there was no surge where I was and vis was about 7m. The crays were in large numbers most being whites. They were crawling all over each other but deep under cover. There were still a lot on the edges of the reef. I bagged out in just 20min. 5 were large whites and 1 red.

The first lot John I tried crumbed, which is not bad. I pickle or made into a salad the second lot' yummy. But last night I had a couple char grilled with garlic butter, which was fantastic. Very slow cooking otherwise the shell goes charcoal very quick. Next I will try what Pete D suggested with the mango chuckney, bacon and cheese.

I split a couple of red tails in half last night, marinated the flesh with nando's peri peri sauce and then baked them in the oven at 180 C for 15 minutes. Tasted so good that I had to fight the missus off to make sure I got at least half a tail to myself. LOL
