I actually pickled a heap of occy and had family over for BBQ crays.. I'm back on my family's xmas card list...Ended up with seven jars of pickled occy..
Pickled cuttlefish. I do same as squid ( with big cuttlefish) Criss cross inside off cuttle fish. 50/50 white malt vin boil mix tip over thin strips of raw cuttlefish . Cover bowl let cool then add chillie garlic salt pepper whatever you like . Then put in jars. Turns out mint. Crunchy outside but soft. If that makes sense .
