Dolphin fish

Hi there, caught several dolphin fish yesterday heard they are very good to eat fresh not so good once frozen, just wondering if there is any truth to this.

yep, dont know why, but after freezing, the flesh takes on a bit of a funny flavour. I think they're best on the BBQ with some cajan spices the same day caught. some of the best eating fish in the ocean!

we used to freeze quantites of mahi mahi fillets as bycatch and sell to fish and chips shops in Freo Albany and other towns plus take home with no problem EXCEPT, small ones can have very soft mushy flesh, not sure if its a disease or just the way they are.
