i know its been done with fish but what is your favorite shark for eating

i have eaten various types from local waters, hammer head , mako,thick skin, whiskery an gummy to name a few. out of them i would say h/head and gummy would stand out for taste

gummy, hammerhead & the sharks we got on the beaches last summer (some sort of puppy whalers).

Always beer battered though... never eaten them any other way.

And I always freeze them for a day or 2 before eating them.

yeah always better after being frozen for some reason, maybe when they thaw out it gets rid of any excess blood

Always found BIG wobby to be the best legal eating. Different to other sharks where big means tough, wobbies get to be better eating the bigger they are. Wouldn't touch one under 2 x metres long.

 

Big shovellies and small bronzies are not too bad.

 

Before they were placed on the protected specie list Grey Nurse sharks were considered a delicasy--pure white flesh and nice and flakey texture. In the early days ang nurse caught by pros usually ended up being split up amongst the crew to take home.

 

When caught they MUST be bled and cleaned as soon as possible--not more than 15-20 minutes after capture or they will start to get the ammonia taste from the brown strip behind the gizzards along the spine.

Have seen some nice fish wasted because they were too busy or lazy to do them straight away.If you cannot see yourself cleaning it for a while let it go rather than wasting it.

Yeah i have always cleaned any shark i have caught recreationaly imediately, more because everyone say you should. Well it must work as all the ones i have kept taste fine. My all time favourite Gummy! followed by small Mako.

But i wonder if it really does make a difference cleaningthem immediately. I only say this from a commercial point of view. Wehen i used to work on a commercial shark netter most to nearly all the sharks we brought up in the net that had been out overnight were dead stiff. Sometimes even half eaten by lice. But we just cleaned them anyway and put them into the pile to be sold locally(consequently after seeing some of what we sold i have never bought shark or fish from fish and chip places anymore). From you experience Canarvonite would the sharks that were long dead in the net we brought up have tasted crap? Or do you think maybe the ammonia would leech out of them?

The salt water has a leaching effect while they are still in the net, more so in deeper water from the extra pressure. Lice affected one were probably better than whole ones due to the flesh being more exposed.Any live fish we spiked and gilled and gutted everything else.

We used to take half lice eaten sharks and fish home with no problems if anything they were better than  whole fish.

Northern water, used to eat small black tip reef sharks, spot tails and milkies but all the others were filletted, brined, plastic wrapped and frozen for export overseas, mainly to Asian countries.

 

Now most fish and chip shops cook imported rubbish due to the fact it comes already filletted and is cheaper than locally caught fish. You ask for snapper and get something with a made up name with snapper on the end. eg southern snapper or instead of barra you get nile perch.

Thanks for the heads up Carnarvonite. Yeah always wondered about the sharks we caught in the net and how they still seemed to sell good considering they were genrally already dead. Hmmm maybe i judged to quickly looking at the state they appeared, and should have kept one to eat. Though it is hard trying to convince a then 17 year old to eat somthing that has been half mangleated by lice! Hahaha.
