fillet knives (any advice on good brands etc)?

hey guys looking to get a new fillet knife but not wanting to spend massive $$ but does anyone have any preferences on knives that does the job and keeps a sharp edge? im land based if that matters . Cheers

I have a couple of Swibos and
I have a couple of Swibos and they are quality. Make sure you get a decent sharpening stone.
Do the right thing and there will be fish tomorrow.

Go for Swibos, Dexter Russells or Victrinox and you will have a good knife that will hold its edge

A Japanese carbon steel deba :D. I tried it the other day on a dolly and geez it did a good job. Better than standard flexible knives I've been using. Have to use a little different technique though, and also maintain the knife pretty well. Didn't hurt that it was literally razor sharp from the wetstone(slice through paper easily with no tearing).
Not sure where to get a proper carbon one here...

Swibo for me if your local go and see the guys at MBL on Bannister road in Canning Vale they sell Swibo's and Dexter,Fox and are more than half the price of anywhere else

Had a couple of Swibo for 30+
Had a couple of Swibo for 30+ years and keep a couple of Vitrinox up my sleeve for more complex surgery and extended trips.

but after someone recommended the Anolon 6" boner I bought one and have found it very good.

mate i have a swibo too its

I have a few swibos for different jobs but if you get them get a good water stone and steel as they have really hard metal blades and the secret to a really sharp blade is not to use the steel too much ( a couple of times ) then get a leather belt ( strop ) and go over 20 times each side to polish the edge.

I picked up a 4 set of swibo
I picked up a 4 set of swibo from ebay for 150 with a canvas wrap,great pick up in my opinion.seller is wnun5791 for those that are interested.
i don't have any association with the guy just thought I would share,they sell a heap of different brands and sets too

victronox 3.5" boning..... used them for commercial purposes and still use them filleting you only use the first inch of your knife.

I've been using a Kyocera
I've been using a Kyocera ceramic knife of late and it is awesome. Beats my swibo's etc hands down.

Gday all
As a butcher but also a keen fisherman I swear by victorinox, whilst the swibos are a good knife they are harder to sharpen than victorinox, dexters are also good, definately go to master butchers in canning vale they will be half the price of rubbish knives at tackle shops

swibos are the go I swear by them get your self a stone and butchers steel to sharpen it . My mate in the NT was a hunter and butcher on the brousilous program up there and he only used swibos he taught me how to sharpen a knife and the most important thing you need is a steel to finish it of after sharpening on the stone and to keep its edge
