It looks like it wanted to grow into a pink snapper but then had a change of mind. I've never seen one or in fact heard of such a fish, thanks for the post and the education.
for the Id Alan, they weren’t big but got a couple and the flesh looked lovely so looking forward to a taste, deckie called em a derby fish due to the colours on the tail.

I didn't know we had tilefish over here
The yanks target them deep-dropping, spectacular looking fish, and larger. Google images is good.
