Herring !

Took mrs out for a fish Sunday plan was to grab some baits
and start to get ready for some beach fishing in the coming
months ! Anchored just inside first reef Quinn's first to arrive
were the herring ! 20mins later we had our bag then the gardies
came which was part of the plan but they kept deep and just
couldn't get the bait to em without out the bloody herring knabbing
it first ! So bailed that and went for squid water was bit cloudy hard
too see if we were on the weed banks or not ended up with two
nice sized ones then it got a bit too cold so pulled the pin !! So
yeah good to see the herring numbers returning !! Cheers fellas

Fillet and skin then dip in
Fillet and skin then dip in flour with salt and pepper, into an egg wash with mayo and a dash of milk then into bread crumbs with dried dill tips and smokey paprika mixed through and shallow fry in oil and squeeze lemin juice on top.
I challenge anyone to try that and tell me they don't rate herring.

I don't mind a feed of herring either. Been a while since I've had one though. Will have to take the kids down to the Cut soon.

Yep herring are way under rated for eating
I love em just straight pan fried in butter - bloody beautiful! also good smoked

Smoked !!
Smoked up heaps over the years ! Simple brine brown
sugar some sea salt !! Dash of concentrated lemon juice
chucked in with some olive chips !! Can't beat it really !
have to try jacks recipe I think makin me hungry thinking
about it !!!

Yep, love them smoked. I've never tried the lemon juice and olive chips in the brine, I usually go the brown sugar, water, red wine vinegar, garlic and thyme. I'll give it a crack. My mate fries them in a wok with ginger and shallots. Bloody nice.

I lived on the herring when I first left home early morning down Brighton beach with what ever bit of crap we could find for bait then home filleted and skin, garlic butter parsley salt and pepper in foil under the grill with a bit of toast top breaky

Olive chips for the smoker !! Bush mans blend
ain't that bad either ! Found hickory too be the
worst I found for fish anyway but have had a mates
pork and chicken smoked in hickory too be quite good
though !
