Yep just mustard & honey. Mix it together and cover it. Obviously roll the skin in salt for crackle.

Honey mustard, and panko crumbed pork fillets! Shallow fry them, simply awesome!

A mate of ours has a butcher shop in midland (Tony’s house of tender meats) and they do them there.

Along with the marinated pork belly strips, it keeps me finely tuned with not just a beer belly, but a fuel tank for a sex machine. Hahaha (that’s what I tell the mrs anyway)

Slightly thinner, but I tell ya what it’s worth it. 

The usually have the bone attached as well which brings out some additional flavour. Almost like a thin pork fillet rib eye, if you follow me? Marinate in the honey and mustard, then crumb with panko breadcrumbs. Shallow fry each side until nice and crispy on the breadcrumb, simply awesome!
