shark jaws
I'm no expert on the matter only ever having done a couple. I remember doing the the "ants nest" thing with a set of shark jaws when I was a little tacker but it took ages if I remember correctly. I just did (a couple of months ago) a set of jaws from a shark my young fella caught. It was only a little whaler of some description so the jaws were pretty small. I trimmed as much as I could off with a decent sharp knife and then put the jaws in a bucket of salt (with a stick in them too keep them propped open). Pulled them out about a week later and they were pretty dry and it was easy to scrape of any remaining fleshy bits. Put them back in salt for another couple of weeks and they dried up really well. I do remember my cousin trying the boiling method once when we were kids but all the teeth fell out. maybe we boiled them too hard and too long or something but it didnt work so well.
have fun

Do not boil them
Whatever you do, don't boil them. It'll fuck the cartilage and they'll fall apart.
Clean as much as you can off with a knife

Scapel
Use a scapel to clean as much skin and meat off as possible but don't get over keen on the jaw hinges as you'll have them fall to bits.
You can use a fine sand paper to get then smooth and a small dab of household bleach for whitening them but don't use too much.

as canarvonite says
you can pretty much get all the meat and skin off with a knife. remember to prop them straight up and down as well as cross ways for a nice round smile!! ahaha

boiling is what you do to
boiling is what you do to get the teeth out! dont do it. Peroxide brushed on after all the flesh is gone will whiten it nicely.

Have just started on a set
Have just started on a set for the young fella today. Actually made a cage so the feral cats don't drag it away and stuck them right on top of an ant mound behind work. They attacked it straight away. Will check tomorrow and report back.

Ants
Ants can and will eat the parts that you need to keep them together, like the jaw hinges.
Keep them away from dogs, they absolutely love to eat them , teeth and all.

ive heard of two technique
ive heard of two technique but never tried any of them. one was to soak them in bleach for a period of time to remove flesh snd whiten the sharks pearly whites. the other technique was to burry the head near the high tide line on an ocean beach for aperiod of time. again im not sure how effective the methods were as i have never bother keeping the jaws.
