Way too low
it should be about 5-10mm below the hull at the lowest point maybe even less

hummingbird
Get a straight edge run it along the hull on your motor side of the tranducer line the stright egde up with the line on the transducer. If you understand what i mean. I work at a hummingbird agent and have fitted a few, i have found that way to work the best.

a stainless bracket with the existing holes you've drilled and then attach the transducer in the right spot after? Something like that anyhoo.......Maxy.......

Use double sided tape
When I had a boat (wish I still did) I fitted the transducer with double sided tape. It sounds weird but it works. They use that stuff now to fix cladding to sides of high rise buildings so I think there will be no problem holding a transducer to the side of a boat. Just get tape that is fit for the application - eg. exposed to and sometimes submerged in water.

As Andy said, the center
As Andy said, the center line of the transducer needs to be lined up with the base of the hull.

Good question Craig!
LOL, never though about that - convention perhaps? Maybe because (in Australia) our bridge is on the starboard side and it's 'cleaner' etc, to run the wiring etc down the starboard side? Otherise, you'd be running wires across the back of the bulkhead to reach the port side.?

yeah normally because of
yeah normally because of prop rotation and clean water, though the idea of wires colin, is that as practically all the wires run down the drivers side of the boat it would be my understanding that the sounder wires would be best on the left away from all the wires to give no interferance at all

tranny!
Yeh as mentioned, too low and you want to have the back of the transducer slightly (1 notch) angled down at the back which helps with water flow/better picture and eliminating the rooster tail.

You're right Matt
Yup, running ALL the wires (especially non shielded) can cause RF interference. Intersting that the old 500Uf (micro fared (sp)) capaciter can help there. But, (always) the best solution is to prevent, rather than correct.
