My first taste of hapuka

 Well I had my first tast of hapuka tonight at work and I can say while it is ok, I'm not that big a fan. Me and my mate cooked it the same as we would any other fish we have( dhu, nanni or bluebone) but it just had a taste to it. Might just be me. What do the rest of you guys think.

 I've eaten a fair bit of the deep water fish (harpuka, trevella and bass) and will say they are all a touch more delicate to cook than dhus, snapper, baldies, etc. It really is a case of thinning out the fillets and taking them off the heat just before they're cooked, letting the residule heat finish them off. If they're are over cooked, as I have done a few times then they become bland, even flourery.

Spot on Soupy, it comes down to about 30 seconds of cooking time, go over it and you might as well be eating garbage from Vietnam.

 Bleed very well and straight away i always cut the heart threw the gills and the cut around the tail that helps get all the blood out , found they taste better that way but puka  is still probably the strongest flavoured out of the deep water fish

 Ok wish I had of posted "we are about to cook our first lot" instead of we just cooked. It will be interesting to try it cooked a bit less
