Thought I'd share a photo from the weekend.,
In my opinion its a definite contender for POTM.
The only good thing about the colder months is we get to make these.
Now bring back summer.

I bet your hands and back are still suffering.
You you still dice the meat yourselves or do you get it cut up. We now get it already cut up.
Looks like 100kg? Done?????

3 pigs in total. we get them killed and cleaned these days but still bone them out and do the lot.
was roughly 150kg of meat.

Just done the same with venison (wild) and Pork (wild) . Did you use synthetic or natural skins ? is one type better or easier than the other?

Habenero we use all natural
Habenero we use all natural skins. I have never used synthetic before so couldn't comment on which is better. I've been told you cant beat naturals tho. Lamby that would be like me asking you for all your spots off your GPS. haha. Na its a simple process mate. Will answer what ever queries you have.

I have a question......why are they hung in a horse shoe configuration ? I have always wondered why this is so .

Because you are using real intestines, they are naturally coiled in your abdomen.
We also use the real deal intestines. They seem to be more resistant to filling (less chances of the skin ripping whilst filling).

Making mine this weekend,
Making mine this weekend, but this year I am going to use ox intestines. They are a little fatter so when they dry and shrink they are a decent size still. My cousin made them last week and they were mint. Love this time of the year.

We did our first pig last year and built a smoker. Did 4 varieties of sausage out of it plus cured and smoked some speck, pancetta and bacon.
Also made some smoked Spanish mack which came up pretty well too.
When asked by a non-fisherman 'how many fishing rods do you really need?' the correct answer is either:
n+1 (where n is the number of fishing rods you currently own); or
n-1 (where n is the number of fishing rods which would cause your significant other to dump you.

don't know if you if you saw my post about the old Italian immigrants introducing me to cooked occy and and salami sangas down on robbs jetty when I was a kid but what you have there is why those guys fitted into Australia with out a problem great pic makes me hungry

this is a tradition my Nonno
this is a tradition my Nonno passed down to my Dad and he has taught me. It will be passed onto my kids as well. It really is like Christmas when we do it. on the Vino and liquors first thing in the morning to warm us up with a couple of espressos. usually finished by 12 and then the big feast with family and friends. Food comas that arvo.
