Rainbow trout recipes

Hi guys
headed down to recfishwest's troutfest last weekend
Ended the day with a couple rainbow trout
i didn't have any real idea on how to cook them so just did them whole in foil with lemon and herbs
They were pretty good and this is the way I cook most fish,
wondering what people's favourite recipes / cooking techniques for rainbow trout,

Instead of lemon, try orange, seems to work better with trout, Or hot smoke them .

I have about 20 each year in my aquaponics system. I brine them in brown sugar, salt and dill and hot smoke whole. Make sure you save some smoked meat to make a smoked salmon dip with cream cheese and sour cream, fresh dill, capers, lemon juice, fresh chives and cracked pepper.
