Safety Bay Herring

Plenty of Herring around the bay at the moment.
We had a great couple of hours yesterday trolling 10 & 20gm Halco twisties on our ElCheapo 10 buck combos picking up 15 or 16 and losing just as many.
We found the fish were schooling up along the edge of the drop off in about 3 - 4 metres with plenty of double hook ups.
Good to see fisheries at the ramp even if it slowed things up a bit.

You need:
1. Plastic bag (freezer bags are ideal) with a couple of tablespoons of plain flour in it. You can season your flour with a few good pinches of salt if you like.
2. Egg mix. For this many Herring we would use two lightly beaten eggs.
3. Breadcrumbs - you can buy the packet ones from the shops or if you've got the time (or no breadcrumbs) you can make your own.
Toast or dry your bread in the oven, let it dry, then blast in a blender or we have one of those stick blender things with an attachment that fits on the bottom to chop stuff up. You can make your breadcrumbs as fine or as coarse as you like depending on how long you blast it for.
At a minimum, season your breadcrumbs well with salt and pepper and you can add whatever else takes your fancy, mixed herbs, chilli salt, paprika etc.
Process: Helps to have two pairs of hands.
1. Pat dry your fillets with a paper towel then drop them in your bag of flour (not all at once, do maybe 6 - 8 at a time), twist the top shut and give it a good shake to get them all covered.
2. Lay your fillets in your bowl of egg mix to cover them and pull out with a fork allowing the excess to drip off.
3. Lie your fillets in your breadcrumb mix and push the breadcrumbs onto your fillets to get a good covering then shake off the excess.
Then shallow fry in oil - DON'T have your oil too HOT - we use a cheap Olive oil 'cause they keep telling us it's good for us, but you could use any oil.
Hope that helps, it's just your standard breadcrumbing recipe really and I'm sure there are others out there who will have their own versions and tips.
Oh, and Herring are great for Thai fish cakes too - yum.
