Sashimi - what have you tried the True Japanese way

Having been converted to Sashimi years ago I have tried heaps of seafood as sashimi.

IMO in order the best is -

Scallops - sliced thin

Prawn - clean and cut into cubes

Squid - cleaned body, sliced into very thin rings

Tuna - so far YFT and SBFT is the only quality tuna I have tried. Would love to see what the fus is about Atlantic bluefin, but jikes it is pricy

Coral trout - sensational white flesh raw.

Anyone tried anything else exotic they can recommend. Have tried most fish caught of WA and some are good, others, well - taste better cooked.

 tuna is the best way, a bit of vinegar and lemon, leave it for a while and it'l dull down in colour

the acids pretty much cook the flesh in a way

tastes great.

Trevally makes surprisingly good sashimi. I've tried gold spot trevally and skippy and they were both really nice.

YFT, longtail and SBFT are all good. Stripey/skipjack tuna is a bit too bloody tasting.

Spanish mackeral is OK but not the best.

Oriental bonito is pretty tasty as sashimi.

Dhufish is much better cooked than raw.

Tailor almost made me thow up when I tried that.

I keep trying it in the hope that it will grow on me but it hasn't happened yet.  I don't mind the flavour but the texture, even cut hell thin, still turns me off it.

The Mrs HATES it with a venguence!!!

Tried a few times, but apart from surviving the good old oysters naturale, pukes it up every time. So a no go for her. Me on the other hand if it is fresh, will give it a go. Even tried mullet, but have to admit that came up and spat into the bin very fast.

One of my favourites is fresh cray!

If peeps are not up for that, then a very light steam, de shell, cube up - raw and slightly cooked for both.  Light drissle of a vg olive oil and cracked pepper, or the usual soy/wasabi.

Yellowtail Kingfish is incredible!

I rate it a very close second to the fatty Bluefin Tuna (Toro) I had in Japan.

It was about $12 for a pretty thin slice... well worth it IMO

Got it from a restaurant outside the famous fish market over there - would be where some of the tuna from wicked tuna would end up!

Liked king George as well but a bit of a gap behind the above ones.

For me my top 3 go like this:
1- Atlantic salmon
2- YTK
3- any tuna.

But as i dont have a boat and am somewhat new to fishing i havent caught any of those.

As for the fish i have caught i have tried tailor, if u have it with soy and wasabi it is pretty good.
Yellowtail (yakkas) is not bad aswell but u dont get much out of it so better off used as bait
Abalone not for everyone has a different taste, but if u soak it in soy and wasabi it's not that bad.
Silver bream - my mums friend said they r very nice when raw, so i tried it, i ts not very good much better cooked, very strong fish flavor

Has any1 tried herring raw? Have been getting a lot lately but heard it's not that great.

Willing to tray anything, sometimes once. As long as its from the sea. Tried raw cobra blood ONCE. I dont care if it is considered to convert you into a deamon in bed - that will NEVER happen again. Still want to ralph at the thought.

Now have to try Cray and Marron. Not had the delight of a YTking yet, but as soon as I am lucky enough I am going to.

Mad Fisherboy, fillet and skin your herring then fill a clean jar about 3/4 full of fillets. Add enough brown vinegar to cover fillets along with some onion and chilli.
Seal jar and a few days later they are beautiful.
Skippy is good like this too.

3- YTK or squid for third spot

 

these days I get a bonito every fortnight or so for brownie points with the missus and usually eat squid wings raw when I get em

Came out served in a glass, and looked just like hot water.

Had a sip and all I could taste was water with a very distant fishy aftertaste.

Found out after thats what it is all about. the skill to get that very very bland fishy flavour in there without spoiling the "water". I was pissed off paying $25 for this, but then once tried is better than thinking what is it like.

 Raw horse is pretty tasty. First time I saw it in the shop I mistook it for roast beef. Went down a treat with a beer and is delicious on the BBQ. Raw goat is overated, raw ostrich....sensational!!
