Snapper on the BBQ

Having a BBQ tonight with a couple of snapper that I caught last night.
Can anyone tell me how long I should cook these on the BBQ.
I normally fillet my fish because its easier for the kids.

Cant help with cooking time, usually just fillet them and then chuck them and the backbone on the barby..

 

I once heard that when the dorsal fins peel out easily its cooked, dont take my word on that though!

 Put it in a baking tin with a little bit of water in the bottom or the fish will dry out and cover with foil, if your barbbie has a hood. You'd be looking at around 30-40 mins for a fish that size. To check I usually lift where the dorsal fin is which is the thickest part. Secret is to no overcook.

right on the money sea kem. Instead of water thou you may use a dry white wine. Stuffing with lemon garlic and onion. Serve with cracked pepper and a fresh squeeze of lemon juice.

Cooked the snapper, turned out a treat.
Cooked two fish with plenty left over for sandwiches when we go to Pemberton tomorrow.

Cut grooves in each side and rubbed in crushed garlic and some onion slices.Also put garlic onion and lemon slices inside fish.

Wrapped in foil and baked in BBQ for about 45mins.Fish turned out beautiful and tender.

 That's good to hear choc. I'm a bit of a purist when it comes to cooking fish though, minimal of anything usually a little butter in the gut and on the sides. When cooked I serve with salad and potatoes oh yeah a glass of Sauv blanc ;)
