Sous Vide Dhu Wings

 Has anyone had a crack at doing dhuey wing sous vide? 

I vac packed mine and it presents pretty well in the bag so I am thinking about dropping in some lemon, salt and pepper when I thaw it out and resealing it and cooking it sous vide style. As it’s on the bone it should come up an absolute treat.

I find that i often need to double bag big wings because the bones up around the point of the wings pierce the bag when vac sealed.

So as long as the bag isnt perforated and lets a heap of water in then it sounds damn tasty!

 When i vac pac wings i just wrap a bit of paper towel around that pointy bit of the wing havent had a problem yet.

I would also put some olve oil in there as well, and have the temp at about 48c

Once they come out of the sous vide at temp, I would dust with flour (maybe some garlic salt) and flash fry to get a nice crispy coating on the outside.
