struggled out to swb today for my first ever time took over 2 hours to get there the ground out there looks great and I am no sounder guru first drop bang jumbo sambo (released) this looks like it might have been worth the struggle to get here, after that we spent 5 fruitless hours sounding around for dozens of drops for two nice skippy , the trip home was better (not pounding into the swells like we were on the way out and there were some big 1s) long way to go for 2 skippy but there is always next time . Probably a sill question but are sambos worth keeping ???

 I wouldn't bother normally Peter. Young fella wanted to kep his last one. Cooked fresh they are ok, i'll do mine in a Laksa or a tomato based Marinara.

Some sambos have bacteria that when you cook it the flesh turns to a soft mush .. more often than not unfortunately , it's a strong taste , but fishcakes with lots of potato come up a treat IMO ..

those big sambos pull better than GT,s I had to lie on the deck for 10 minutes to get my breath back afterwards its my fist big sambo and nearly gave me a heart attack

Mate I have one of those old fashioned hand mincers  can generally put 4 herring or slimys in and then turn the handle around and depending on the size of the minceing plate at the front either comes out mush or like fish mince an old boy down the road from me used to own a butcher shop many many years ago I belive these big ones are rare as hens teeth.

I made up to 10lt buckets the other day filled with minced up herring,slimys,scalies

I like keeping small sambos(~70cm) for fish currys. It holds together very well unlike a lot of fish that breaks apart easily. Obviously the curry gives it all the flavour though.

Don't bother with keeping any of the bigger ones though, as it ends up being to much meat for the amount I want to cook at once and I don't want to freeze it.

I have tried just simply breadcrumb frying and beer batter deep frying them before. Just found it not that exciting. Not bad, but definitely better fish out there for that.

 You can still get reasonably large hand mincers at master butchers in canning vale [about $130] I think.

Deep fried

 I have kept the odd sambo, mostly if it is to buggered to be released.

I fillet and skin the fish, then cut out as much of the red meat as i can. 

Set up a deep fryer up the back near the shed (optional).

When we are ready to eat, we cut into small bite size cubes, then into some batter then a deep fryer.

Put onto a plate with paper towel, salt to taste, crack a beer, enjoy.

We have actually had people rave about how nice they taste done this way, but i do throw them back if they are gonna survive.
