Squid Recipes

 G'day guys. 

Just wondering how you fellas (and lasses) like their squid best? Toying with a few ideas because plain old squid rings is getting a bit boring. 

Anyone smoked squid out there? Have access to a Bradley smoker at work, as well as a shop full of BBQ's haha (perks of the job). 

Thinking of something like a meditteranean stuffing, turning the tube into a sausage basically, cold smoking it, and then flash grill on the BBQ. Just unsure on how the squid will turn out.

Keen to hear your ideas, just want to open my seafood skills a bit more.

Cut them into strips (remember use the wing - cut out that hard strip and they are good to go) and do them in butter and garlic, just like you would garlic prawns.

 I did thai pork and prawn stuffed squid once, it was the bomb!!! Lost the recipe and have tried some similar ones but unfortunaely they never ever get there.

Use a quality chorizo (or other charcuterie) diced fine with char grilled peppers, lemon zest & a pinch of sumac with your other seasonings. Cold smoking should be interesting, I like your thinking

Cut Chorizo and Squid into bite size pieces.

 

Pan fry the Chorizo with no added oil. Let oil from Chorizo grease pan. When Chorizo almost ready add squid. Squeeze of lemon juice over the whole dish and game on. Dont over cook.

 

Whenever we do it this way it gets slaughtered.

I am defiantely going to give this one a try. Always cooking chorizo on the barby and the squid in the oil will be very nice.

spoke with the boys from the smoke shack on the weekend, they did some squid for 1 hour and apparently it was shit hot. hot smoked too not cold.

I stuff my squid with fish and prawns and some herbs and bake them in a tomato/white wine base sauce. everyone loves it.

KISS principle - either cut it thin and eat it raw with soy and wasabi. You have to try this to see how tender this is. Or mix an egg with salt and pepper, add a little corn flower or Temura flour to thicken it up slightly, dip pieces in that and quick fry. Yes simple but sooo nice. You can also add other spices to the mix to spice it up.

did one years ago, cut up small tube and legs, finely chop mint garlic and chilli and mix it all togther with the squid and some olive oil and lime juice and just fry it up for 2 mins if that, add more lime juice during frying if ya want. beautiful, i made it as an entree or tasting plate but could be a main.

if thin rings. But the rule of thumb IMO is DONT overcook. I eat squid raw with Wasabi and Soy. The family dont! I cook it very briefly so they heat up, but is still very very tender.

old trick that totally works , marinate in kiwi fruit (has an enzyme that tenderizers) for a few hours and wash off, prepare and cook, always tender
