black bream recipes/cooking tips

Going bream fishing this weekend instead of offshore. The wife still wants some fish brought home. Anyone have any good black bream recipes/cooking tips? Caught many but it has also been many years since I have eaten one.

Fillet

Gut it, scale it, cut the head off then fillet one side off, now its ready for the pan.

Little bit of butter and in it goes, take care not to over cook it because they have a very delicate textured flesh, toss a coin on who gets to eat the fillet and who gets to eat the other side and pick all the meat off the bones.

Heh, have thought this about days gone by, rape and pillaging resulted in a mass catch, right handed filleter, just knocks off the fillet from the left side of the fish cos its easy and discard the rest lol

The reason for doing it that ways that they are a pretty thick shouldered fish and to pan fry them whole the outside gets burnt and dry before the inside cooks properly.
Filleting one side off allows it to cook all the way through

in monkey mia we caught yellowfin bream, similar to above gut/scale/clean/head off but squeezed some lemon and a little salt n pepper then wrapped in foil and cooked on the bbq untill firm then just picked at them, get alot out of the fish n tasted great. never cooked a black bream but itd work the same.

hey mate black bream are beautiful eating. when you catch them bleed them and put them straight on ice. I like to fillet them and take all the bones out. I recon bread crumbs are the way to go. so cut your fillets fine about 1cm thick put them in flour then egg and then into the bread crumbs. shallow fry them in butter and oil mix for about 30 seconds aside they wont take long as theyre fine fillets. Trust me youll love it and the kids always go back for seconds and thirds

I don't believe in cooking a fish whole. its only for those that don't no how to clean a fish properly and treat it with respect.
