Tuna Bar snacks..

Another batch done. This stuff goes down well after work with a few brews!

Striped tuna in canola oil with chilly and garlic.

Im still working on pulling the flavour out of the chilli as its just not hot enough 

Tryed it with bluefin and yellow but stipeys are fine. As most tinned tuna is stripey.

The browny point days out at food fairs with the wife has its benifits as i found some chilli oil which works well

I got the recipe 2nd hard so its still not perfect.

Boil the tuna until cooked through.

Place pieces on a wire rack and put in the oven the evaporate excess moisture.

Prep jars, (sterilize)

Add garlic, chilli and tuna into jars, pack down and add canola oil.

I use canola as other oils solidify in the fridge

Then chill in the fridge.

I did here that its better to soak the tuna ina brine but im unsure of this process.

 Looks great mate! Reminds me to get another batch if occy on the go. I reckon a shake of powdered cayenne pepper over the pieces before jarring would give that extra chilli kick you're after.

Last batch I did up had some of that in it to give it some oomph. The oil doesnt extract enough heat from the chillis.

I have some (obscenely hot) chilli sauce that also goes well - Blairs 3am reserve. Couple of drops in a jar is dynamite. More than a few drops and it would be inedible!
