What to do with Tuna?

Lovely problem really, so far;

Linguine with Fresh Tuna, Tomatoes and Lemon

It rated very high, its good because you can cook it a little more for the squeamish, or at least claim too.

Tonite's was sashimi tuna dipped in a mix of mayo*,soy and wasabi. Otto, my 2yr old, insisted he didn't want any which was very unusual for him, that was until we seemed to enjoy it, and then he wanted all of it! Funny kid, I showed him the mostly whole tuna and he watched me cut it up; "oooo look MUSCLES INSIDE!!!"

* Not that praise crap or anything, best foods or else!

Till when I was at Coral Bay many moons ago I happened to be at the fish cleaning tables cleaning my hard fought for Tuna when the guys from a charter boat happened along to clean their days catch. Well, when I asked them what was the best way to cook my fish they said "put it in a pot of water with two leather boots, season to taste , cook for about 15 mins, drain off the water, take the fish out and then eat the boots.

They were filleting Red Emporer, Bald Chin Groper and Cobia.

They gave me two huge fillets of Cobia and said Coral Bay is a nice place, hope you enjoy! I havn't eaten Tuna since. LOL .

tuna cops a bad wrap, if done right it can be quite tasty. Unless you dont like the strong fish taste! I do mine in cutlets then marinate in teriyaki sauce, bbq on both sides leaving a pink strip in the middle and serve on stir fryed bok choy. sometimes i add those sweet sausages you find in the shrink packs in the oriental section, thinly sliced to the bok choy.

You know I don't think fresh raw tuna is terribly fishy, but that could just be me. I ate stripers once, they are strictly bait now. Next on the list is a YFT.

Tuna is YFT,Big Eye ,Southern Blue or Albacore your right , I wouldn't eat Northern Blue or Longtail , Mack Tuna or Striped Tuna . A Nice YFT steak quickly cooked on a Hot Plate with a bit of Lemon Pepper MMMMM

just cut up any tuna fresh... like a day or two after being caught. fillet it.... and then cut into chunks... rake skin off and eat raw with wasabi and soy sauce...delicous

I either have mine raw or marinate in sherry, lemon juice and some soy sauce. Quickly grill then serve with mash and veg.
I normally cook up the offcuts/leftovers and make thai fish cakes. Any sort of tuna is good for these.
Another way I've done and was very nice is get the tuna "log" (the piece of fillet before you cut it into pieces) and cover with either sesame seeds or a dukkah type mix, quickly grill on all edges then cool. When ready to serve cut into cm think slices and serve. Cooked on the outside, raw inside and a nice coating for some different flavour.
