Cooking up a treat tonight...

Sun, 2009-11-22 17:01

Sorry, I missed out on this thread. Tonight I am doing my specialty summer dish in "Tasmanian Baked Salmon with Vegatables". I have posted a pic of this before I think. It's so simple Russ and is like a gormet dish. It goes like this....

1 Salmon steak each.
Baby Brocholli (steamed)
Baby carrots (steamed)
Chat potatoes halved - skin on.

Rub spuds with oil and season. Roast in a tray at 190C for 30 mins. After 15 mins, put salmon steaks in the oven also (skin down).

Place the spuds neatly on a large plate (in the middle of course). Lay brocholli and carrots elegantly on the side of the plate and lay the Salmon on top of the roast spuds. I usually put some fresh dill as a garnish, season with black pepper and salt and a good squeeze of lemon..... Yummy.

We had an excellent meal thanks Russ and Sandy

Wed, 2009-11-25 07:18

The Emperor, Snapper, Crab sticks and chips were cooked to perfection. The piece de resistance for my youngest daughter Rebecca and I was the Lyndsey chilli mussels and crusty bread, while Graham and his lovely (growing) family were singing the praises of the new pizza recipes.
A beautiful waitress and hard working kitchen staff ensured our meals were served with style.
And we even had fancy glasses (Lol) for our soft drinks.
See you again soon.

Chickens

Wed, 2009-12-02 09:05

Tell me about it Colin, We have 4 Isa Brown Hens for eggs, and a inghams meat bird about 4 months old, and a Silver Laced Wyandotte Rooster about 5 months old.  The last two we raised from Day olds.  We had them free ranging at our place, but when the rooster started crowing, it was time for them to go to the other house where our egg chickens and vege garden are.

Built an enclosure for the new birds in the old coop.  One day later, the rooster has escaped and been harrassed/pecked by the Isa Browns.  He has about 2 of his beautiful beatle green tail feathers left and a Bare Bottom:( I went to check on him yesterday and he is looking alot better and has perked up a fair bit.

Apparently Isa Browns are very vicious and will not tolerate different species or even new birds being added to the run.  I think that we will be phasing out these chickens over a series of sunday lunches and replacing them with Hyline Browns or something similar.

Our Isa browns have also accounted for about 5 doves that were in their pen and obviously didnt get out of the way quick enough.
