I think you will find the fish on the left of the pic is a juvenile and nothing to do with stress.

Yep,
they start to lose there stripes as they get over around 3-4kg.

cheers for correcting me guys. i was told by a marine biologist that when theyre stressed they go red, but are usually stripey when on the sea floor and calm. hes gonna feel like a pretty big idiot when i tell him he was wrong, again. haha
