Smoked Tuna Pasta

Yet one more way to eat tasty tuna! This was hot smoked in a BBQ with a covered lid, so pretty easy to do.

Actually the funny thing is
Actually the funny thing is how little I had to do with it;
1) This is Tim's fish, I let mine go.
2) I made up the brine; in 2l water boil 3/4 cup salt, 1/2 cup of brown sugar, garlic powder, fresh cracked pepper, bay leaves and a few slices of lemon.
3) Left that in the fridge to cool, dropped the fish in it for an hour or so.
4) Brought it out, patted it dry with towels, left it on the bench for a few hours to dry (probably a frost free fridge would also be good).
5) Next, Andrea went to cook it and discovered the gas bottle was empty so she went to the shops to get another one.
6) She fired up the covered-lid bbq with some of those shavings from the shops on one of the plates on low, lobbed the fillets on the corn rack and it took about 20min!

I think I got off pretty easy really, I had a slow day on Sunday but I was fine Monday.
The smoked tuna was pretty easy to do, just need a covered BBQ.
