Nice YFT Pete, yeh the bleeding is a must (if you havn't already done it). Lay the pectoral fin down flat, use a two finger gap behind it and then insert a sharp knife point. Do that to both side and it'll bleed out properly then once done a iki jimi spike to shut down it's body.This will ensure the flesh will be at it's best then!
