Best chilli / spicy sauces

I'm a pretty keen condiment junkie, I tend to use chilli and spicy sauces the most though.

Anyone got recommendations of different sauces along these lines?  Tabasco gets a fair flogging here as does this insanely flavoured spicy tomato sauce I get mailed to me from a lady in Adelaide River Ma's Preserves) NT.  I'm interested to know what everyone else uses though... especially some of the gear you can't get from Woolies etc.

My garden had an abundance of tomatos and chillis.

I made my own chilli sauce.  Turned out fantastic!

It is a slow cooker which simmerred for about 4 hours.
Then put one of those hand held blenders in to turn it into puree.

Let it simmer for another hour to thicken.

Didnt follow any exact recipe, just salt, sugar, vinegar and spices on top of the fresh produce.

Made 3 batches, all a bit different, which is good cos my little kids don't like it too hot!

I enjoy cooking with spices.  Garam masala, turmeric, chilli, fennel, ginger, all that stuff.  Have some great fish curry recipes.  Just today been checking my camping spice jars.  You can cook some great dishes with some fresh fish, spices, maybe some minced garlic and minced ginger....

Always good when camping.

Ha Cheers TIM, I was about to plug Wildfire aswell.

West Oz owned family business and we have alot of 1st place 2nd and 3rds from the various Chilli competitions around the world, namely Americas World Chilli Festival, for our sauces, spices and our hottest product took 3rd for hottest condiment in the world category. We have also run 2 successful chilli eating competions last year and 2012 at the Kardy and High Wycombe.

The best thing is we are all about flavour with heat, not just trying to kill you.

I should mention that our chilli plants are in Bunnings and the ARALUEN CHILLI FESTIVAL is on again held in FREO on the Esplanade on the 8th and 9th March.

Hope you find the sauce you are looking for.

Adam

Tomatoe Sauce - Wog Style

Sat, 2014-02-15 20:16

Just cracked another beer, finally sitting down after making Italian style tomatoe sauce with the family since 9.00am. Fresh pasta for lunch, fresh pasta for dinner. Beers all day. Carb overload!

We don't put chilli in, as some don't like it. (I add mine later) Roma tomatoes, onion, basil, salt. That's it. When cooking you can add whatever you like, but it's a great starting point. Way better than any pasta sauce from the supermarket.

Cheers,

BD.

Not hot, but looove the taste of the lime Byron Bay chilli sauce. If ya want hot, try wildfire Chilli sauces, some are mega ort burners!
