Interesting that in humans red eyes is not a requirement for albinism.
This is a bit scary though ... The incidence of albinism can be artificially increased in fish by exposing the eggs to heavy metals (arsenic, cadmium, copper, mercury, selenium, zinc).

Not sure if it's the same for all fish but I'm pretty sure in aquarium fish all albinos have red eyes. Maybe just the diet?
