Ripe tomatoes roma the best !  cut in half put in large pan cook them up untill they collapse 3/4 of an hour strain some water off them , pass through machine thats separates seeds & skin add salt to taste to sauce , seal bottles place bottles in large container with water, boil them up wait until water cools put in cpbd . will last 1 year unopened. can add Basil but i find simple the best can add later.

Recipe pretty simple Pete,

Recipe pretty simple Pete, done it with the wife and her family for the past 4 years

Tomato's - Roma's
Copper pot to boil them
Sauce maker to mince them
Pour into bottles and place 1 or 2 basil leafs in it
Cap it, then boil the bottles (we do it in 44 Gallon drums)

Only thing that really changes is the method.

Some Italians don't boil the tomato's and just mince them, some core the tomato's... down to family tradition really.

Trust me if you have pasta and sauce that day you make it, will be the best pasta you will have ever eaten!!
