Baked Snapper with Hearty Winter Vegies

Tried this last night, fantastic, a winner for the entire family!

1 snapper (1.5kg)
Light Olive Oil
Salt & Pepper
Fennel seeds
1 lemon (sliced)
2 leeks (1/2'd & sliced 2cm)
3 carrots (cubed)
3 desiree potates (cubed)
1 can crushed tomatoes (juice drained)
1/2c white wine

Preheat oven 200C
Oil baking dish (big enough to hold snapper)
on top side of snapper make 3 scores through skin
brush snapper with oil, dust with salt, pepper & fennel seeds inside & out
cut enough slices of lemon into 1/4 to put inside cuts
place rest of lemon slices inside gut cavity
Fry leeks & carrots until just starting to turn tender
Bring potatoes to boil from cold water & boil until just starting to turn tender
Put snapper in pan, spread carrot & leek mix around outside
spread potatoe over the top of carrot, leek, mix
mix crushed tomatoes & wine together really well & pour over vegetables
Cover with foil & bake for 15mins
Remove foil & bake further 10mins until potatoes are crisp, other veges are
soft & juicy & the fish flesh is opaque to bone
