baldie fillets

hey guys.
got a couple of baldies yesterday whcih we are cooking up for some friends tonight.
missus wants to deep fry them to do fish and chips, but seems a bit of a waste of such good fish to me.
anyone have any good recipes whcih will do the fillets justice? if it was just us i would just go a bit of butter and salt, but the wife wants to do something abit more fancy. wasnt able to find much on the search.

Bread crumbs with a sharp
Bread crumbs with a sharp cheese grated in and finely chopped chives and mix well in a bowl until all combined. Dust fish in flour. Then beaten egg. Then into bread crumbs until all coated. Spray with a aerosol olive oil spray then into 200c oven for 10 minutes. Deluxe. Always moist and flakey.

Good fish needs to be kept
Good fish needs to be kept simple in my opinion.
Dust in flour and in a pan with a bit of lemon juice . No need to add other stuff to improve taste .
Had fresh kg for dinner tonight that exact way . Juicy as and tasty

ended up doing a mix.some was

some was beer battered in the deep fryer.... best fish and chips i have ever had lol...
other went in the oven in alfoil and baking paper with a bit of butter, lemon thyme and salt. really good fish. tasted great. even with my terrible kitchen skills.
