Only ever use a 1/0 hook with a full fresh prawn, I never use a sinker. I find a likely looking snag, cast up against the tied and let the bait slowly sink down past the snag, keeping the line slack. Normally give them about a metre before i set the hooks. This method has always worked pretty well for me.
my bream outfit is loaded with 8lb braid double uni'd to 3' 10lb flurocarbon with running 0-2 all the way to a 3/0 circle. never fails me, only probis when snagged, its snagged lol.
i've caught many 40cm plus bream on size 4 hooks. generally i like to use size 4,2 and 1 depending on the bait and situation. I will hardly ever use bigger then about a 1/0.
once you've caught a few more bream, you'll learn that they don't always down the hooks easily. sometimes even the big ones are very finicky. why use a bigger hook then you have too?
Bigger baits, and keeps the picker bream from taking the bait as they can not swallow it, its like using a big mussel, will stop the small bream and blowies but requires a slightly bigger hook.
i think 1/0 is a fairly good size where the bream we encounter have to swallow the whole bait to get hooked.
or mussels for bait. Otherwise, a 4 circle hook, or even a long shanked hook, work fine.
I also find that using a soft plastic jig head, baited up with a peeled prawn, and thrown next to structure can work really well if there is a bit too much breeze or current to fish unweighted baits.
the rig i used to use was a running sinker (apropriate size)down to a swivel then about 3feet of trace to a size 1 or 2 baitkeeper hook with a whole prawn or blood worm , that rig has accounted for bream up to about 3kg, using that size hook the mream can easily inhale the whole bait and hook
verry rare , got that one 23 years ago down at canning bridge, used to get heaps of 2kg plus ones as well, thats when a 1kg bream would just go straight back as there was plenty of bigger ones , and you fished for them during the day as very few blowies were around then
i always just use a size a size 2 hook with prawn or mulie depending were i am. we were at moore river 1 nite and pulled in a 47 cm which was 1.7 kg. if i do use a sinker its just a small running bean or ball
I caught my 36cm at causeway just about a month ago. I was using size 1 hook with river prawn. I didn't know it was there at the end of my line cos i didn't feel anything. Felt a thump really and was waiting for it to take the bait and run but it just sat there in the water not moving till I started reeling back in to check on my bait. Was a lazy fish. But it might be because of the low tide and almost absent current.
I always fish light for bream. 2kg mono max down to a 1/0 Owner Mutu Light hook tied to the end of a 1m 10lb fluro leader. Peeled prawn for bait and either no weight or the smallest possible running sinker.
cast right against the snag/structure and current will drift your bait out and the bream will chase it. Then you have him in clear water.

where you at?
rigs are dependent.
bait=most use a running sinker rig. just enough lead to cast and use river prawns if you can't get fresh bait.
soft plastics work well as do hardbodies but if you are not experienced then stick to bait until you become more confident.

i agree daniel you can end
i agree daniel
you can end up missing a lot of bites if hook is too big , and bream are pretty switched on.
1/0 is massive for bream IMO
If I spent half as long fishing , as I do reading this bloody forum , I'd be twice the fisherman I am.

a bream up to 40cm will down
a bream up to 40cm will down a 3/0 quite easily, they are small snapper size
