Cleaning wobbegong

Caught a couple of wobbegongs last night what a pain to fillet anyone got any good tips on how to clean them without losing all the meat I still got a good feed though dinner tonight I'll put up a report with pics later on thanks guys

cut the head an tail of an
cut the head an tail of an fins , cut from the bum to the head ,then from the bum to the end of the tail ,then cut each side of the spine an take the spine out ,cut into meal size bits an then fillet the skin off....

i was told a trick by a wise fisherman
and that is to cut the skin from inside to out! it is heaps easier and doesnt blunten your knife. i just slice each side off starting at the tail working to the very top of the head, cut the gut cavity out then skin the shark and cut all remaining blood from the fillet, then cut into what ever size pieces you want

cheers guys managed to get the fillets off ok they wernt the prettiest fillets. wont change the taste of them though. its a really firm flesh

Bigger
They have covered how to fillet them so won't add to that but you will find that the bigger they are the better eating and easier they are to fillet. As Snappermiles says, cut from the inside of the skin out. Slide your knife in under the skin instead of trying to saw your way through from the outside, you knife edge won't last a minute otherwise.

Ive found the recovery really low.
was taught by a pro how to fillet them and found if there not over 6 feet long you really get little for your work, plus the fact you waste so much of the fish. The belly is the biggest loss as theres skin one side and then the smooth inner lining. That smooth inner lining has to be removed as it will curl up when cooked. Ive tryed geting a decent cut of flesh out of it but i wasnt that successful.
I release them now.

Knife cut lines
Flesh runs high into the top of the head so be sure to run around it with the knife. Fin, Gut and fillet as usual

The guys have it right
Sharp large knives are essential and you need your steel with you. Work from the inside. I did one with a "relatively" shap knife and it was a waste of time and effort. Using a "very" sharp set of knives it became much easier. Hard work yes; reward is good.
