Cryovac Machine
Submitted by just dhu it on Wed, 2009-05-27 14:10
I am looking at purchasing a cryovac machine to keep fish in better condition etc , last year i watched some other guys mess around for ages with their machine to get all the moisture out before the baga would seal.hope they are all this bad
Can anyone suggest a good model or preferences and where to buy

i have a sunbeam foodsaver
i have a sunbeam foodsaver the new model and it is cool to suck moisture through it, in fact it has a moisture setting. Works a treat, only one i have ever used though so i dont really have anything to compare it to
cost me about $250

Sunbeam 550 i think
Had it for about 12 months and have not had issue with moisture because you 1/2 freeze fillets and then Cryovac them. Sealed perfectly
Have heard of people that insert a piece of paper towel inside their bag before sealing, to stop the moisture leaking out and affecting seal of product.
Hope this helps

sunbeam foodsaver here too
easy way to reduce moisture is to pat dry with a paper towel and in some cases put a bit of paper towel in the top of the bag before placing in the machine.

I went a step up
and got the Orved from MBL in Canning Vale. Its about $400, but well worth it IMO.
It will seal even if the area is quite wet, but obviously better if there is no moisture. Mine has a moisture pot that traps the water before it gets into the machine - but its not a great idea to suck water into it regardless. As Andy said, pat it dry with some paper towel, or even place it on some paper towel so that it sucks up the moisture. Not sure if you can get those moisture absorbent pads like you get with a tray of meat, but I reckon they'd be the go.....

Vac Machine!
I recently brought the Sunbeam Vac 420 for $130 and some extra bags and the unit is a ripper. As Andy said, pat dry with some paper towel and no liquid issues. I'm rapped with the machine and it's getting a big workout ATM

Sunbeam
Our Group have 3 Sunbeams, started with one 7 years ago. Great machines and have packed a lot of bags over the years.
The trick is not to wash the fillets after filleting, don't put moisture near the fish in the first place. We wash after defrosting
