deep fried fish scales

Years ago an old timer told me to deep fry Dhuie swim bladder ( the white bit) and also the scales he said they come up like prawn crackers. Has anyone tried this?

Deep-fried fish scales is not a very popular dish, so nearly all of the 2,000 metric tons of fish scales Taiwan produces every year used to be seen as useless stuff that processing factories and wet-market fishmongers did not hesitate to throw away. But things have just changed, thanks to the Council of Agriculture's Fisheries Research Institute (FRI). Wet fish scales now sell for NT$40 (US$1.2) per kilogram because they contain collagen.

Chai Huey-jine, an associate researcher at FRI's Seafood Technology Division, explains that a kilogram of collagen can be extracted from five kilos of fish scales. That can be made into approximately 2,000 units of lotion, protective cream or other collagen-based products, generating a 500-fold increase in value. In addition to collagen, fish scales are 55 percent composed of hydroxyapatite. A kilogram of hydroxyapatite for use in cleansing products, sells for between NT$20,000 and $110,000 (US$600 and $3,300), and when made into tooth implants, that value leaps to NT$1.75 million (US$53,000).

our little Yorkshire Terrier loved dried fish scales.  Old fart would be cleaning the fish at the fish bay in the Caravan Park at Leeman and her ladyship would be there eating as many as she could.  Plus any tit bits of dhuie or snapper would also be down her throat.  The swim bladder is very nice, friends of our always ask for us to bring home the bladder.  Snapper livers are also delicious.

get all the heads and mash them up into a thick paste (either chop them with a knife or smash in a mortar and pestle) and make "biscuits" and cook them.

Next time you catch a coral trout (and it would probably work with other species with fine scales) keep the skin (don't scale it), slice into fine strips, salt and cook until crispy on the barbie.  Makes a tasty beer snack!

Deep fried swim bladder off Barramundi and Threadfin Salmon (the giant type) and most demersals is awesome, just salt it a little, just like fish crackle, yum.
