Deep frying fish

Hi Crew,
Got a new small deep frier for chrissy and want to do up some fish n chips tonight. Anyone got any tips for best results or different variations to try as I'm not too sure as to what to do and can't be bothered reading the instructions (even though I probably should)

Beer Batter
ok here it is
2 can of your favourity brew
1 cup plain flour
1 cup corn flour
and add 1 can of your brew a bit at a time till just coats your finger keep cold til you need to use it for a crispy batter. while making this mix you also need to drink the other can of brew.
coat fish in flour then dip in cold batter mix cook in frier at hight temp. Done oh yeah do not forget to cook your chips first and re heat frier.

now here is another trick mate, cook the chips and the fish for around about 6 minutes or so depending on the size, then take out of the oil and let drain. While the oild heats p again.
After the oil is bloody hot again drop the fish and chips back in, this second bit will golden and crisp them up

Also when your putting the fish in lower it in slowly into the oild so it doesnt stick to the bottom

Here's a tip Adam - wait till the oil is hot. Test with a drop of batter. It needs to bubble immediately. If it does, then remove it before starting.
Also, get a hand sieve and take out all the floating bits before doing the next batch.
If eating lots of deep fried stuff, drink lots of water thru the day to prevent a sore throat

Soda Water
If you don't want beer batter use soda water instead, the bubbles help to aerate the batter. I've also whisked egg white from one egg until it forms peaks like a meringue. Fold this into the batter and it's the ducks pajamas.
I also put some ice cubes in the batter bowl to keep it icy cold.
If we can hit that bullseye, the rest of the dominoes will fall like a house of cards. Checkmate.

egg,corn flour and cagin spice dip fish in egg then the cornflour then straight in the wok or deep fryer

when putting the fish in the
when putting the fish in the oil hold one end while part of the batter is cooking then when that floats let go from about an inch ,that will stop the fish sinking and sticking to the bottom , the whole process only takes a few seconds
when you have got it right you will wonder how you could have messed it up in the first place , so simple

Put them on a fork or skewer
Put them on a fork or skewer and lower them in to the oil slowly seals em and stops em sticking. Type of oil makes a difference to.
