Filleting Knives

Hey guys, looking at getting a new filleting knive. Just wondering what are some of the better brands and better value knives. Not looking at spending a fortune, probably not to much more that $50.

Actually the cheap fillet knifes are very easy to sharpen and a sharp knife is easy to work with.

A skinning knife, now that is different.  Spend a bit more on that one.

Not long ago I bought a Legend 9" for $12 at one of the knife shops in the shopping center. Karrinyup has one shop like that.  cheap knives may be easy to sharpen but they wont stay sharp long. The Legend took me a little while to get sharp  so that ought to mean it'll stay sharp longer. Bladerunners in the tackle shops are ok. I'm also using a cheapy boning knife from Woolies for filleting small fish and that also works. Guess what I am getting to is that your knife needs to be sharp like what Alfred says. Get  a stone to do it properly if you dont already have one.

Look out for the Tramontina master fillet knives. I got one on sale for $25 and its the same sandvik steel as victorinox and others, just isn't a polished-finish blade.

Using a 12" chef knife for skinning ATM and its ok. Keen to try one of those big flat skinners, maybe the swibo?

Jamie I use the above for skinning and find it very good.  I think it's 30 or 31cm blade.  It seems to keep a good edge; just doesn't get used enough.  It has been almost 6 months since I have been out for a fish.

Certainly I think that style of skinner is pretty good, might have to try and pick one up myself sometime.

I think I'll get a shorter filleting knife for the reefies as well, and just keep the long one for the pelagics.

I have a big flat Mundial skinning knife I got for $35 at Harbourtown.  Seems ok so far. Apart from that the Dexters I get out of the US for $8 each are doing the job well.

Any one of the top brands will more than do the job. Swibo, Victorinox, Dexter Russells, Joseph Rogers, Mundial are all good knives, just have to pick the type that better suits what you want to do with it.

Patty I use A Victorinox Fibrox for most of my filleting work and skin with a Bladerunner. Combined with keeping them extremely sharp with a chefs choice electric sharpener I'm successfully producing quality cuts of fish for the table. Definitely three of the best things I have in my 'tackle bag'. My advice would be spend a little extra and buy quality knives that stay sharp longer, they are a worthwhile investment. I got mine at Oceanside a few years back and haven't been disappointed.

does any one find it difficult to use the skinny filleting knives?

i was a butcher for 9 years so i know how to use a knife but always found them skinny flicky fillet knives a pain in the ass

i still use my boning knife 6 inch to fillet and skin even on 20 kng dhus

when you fillet with a long blade do you not follow the the shape of the bone? the spine bone raises up a fair bit on some fish and then drops down again so cant see the benifit of using a long flicky knife

i seem to use ony the top 3 or 4 inches of the blade and follow the bone shape and get all the meat

supervisor I think the skinny flicky ones are better at filleting something small like herring, tailor or even flathead.  My little 6 inch martini is perfect for that.  Bigger fish and depending on the species need something with a thicker/stiffer blade.

i have a mixture of swibo (about 10 or so) and a few schrade old timers. the schrade are bought from the states usually landed for about 22-25 dollars...they stay sharper longer than the swibos do...but both are good

Too true, for filleting the bigger fish I like a long stiff blade like a carving knife. Your right you only use the top section of the blade for filleting, but for skinning the longer the better.

Spend some of the money on a good quality steel.  The trick is get it professionally sharpened regularly - "Cut It Out" in Murray Street Perth - $7.50 per knife, and then every time you use it give it a couple of swipes along a good quality steel to keep it sharp.

Much your going to be using it. I fillet for a resturant at the moment and used to fillet for kailis.

 

 

I found the Analon Boning knife is perfect keeps its edge aslong as its looked after, doesnt rust and they are on offer in lakeside (joondalup) $34.99 insted of $55 i think, ive got 4 aswell as my fibrox.

 

i use my knives every day all day and the analons are my fave

MBL food services in canningvale (17 bannister rd) have a huge range on display, reasonable prices, bit more than everton online but you do get to see the real thing before you buy. They also have lots of other stuff you don't need but will buy so beware!
