thai fish cakes

Hi Guys

I recommend thai fish cakes once frozen! Even before freezing.

Poach the fish, mush it up with some chilli, lemon, egg, bread crumbs, coriander, lemongrass. Fry a little. Awesome!

depends on the use

Have never had the flesh go mushy, so bait wise fine, for frying wouldnt do unless fresh, for smoking never had an issue!

We caught 8  salmon between the 2 of us last year down Esperance way , had some of it in the freezer for up to 4 weeks and still cooked up deep fried and some in the pan really nice.
