 2 tbs of sunflower or canola

 2 tbs of sunflower or canola oil 

1 tsp mustard seeds

1 onion sliced 

1 cinnamon quill

1 tsp crushed ginger

4 garlic cloves thinly sliced 

1 long red chilli

1tsp ground cumin

1/2 tsp ground turmeric, garam massala 

12 fresh curry leaves 

2 tomatoes cut into wedges seeds removed 

300ml fish or chicken stock

40l coconut milk

450g fish cut into cubes I used baldy but would be good with mackie too

Heat oil in pan over medium heat. Add mustard seeds and cook for 1 minute. Add onion cinnamon and 1 tsp salt and stir for 3 mons or until onion has softened. Add the ginger,garlic,chilli,dry spices,curry leaves,tomato and half the stock and cook for 3-4 mins until most of the liquid has evaporated. Add the coconut milk and remaining stock and simmer over medium for 5 mind. Add fish and simmer for 5 mins or until fish is cooled through. Serve with basmati rice and enjoy.
