Toby first of all ill start off with the bait. Gummys will generally eat most fresh baits like squid, yellowtail, crabs etc. Out of all the baits though fresh scalies have worked best for me. I usually cut the tail section off leaving 3/4 of the bait left or even half if they are being picky, I find it gives out a better smell an also the smaller baits get taken in 1 hit.
The rig i use for half or 3/4 scalies is around 70 cm 60 lb leader, running a snelled set up. The first hook down the bottom of the rig i run a size 6/0 suicide and the second hook for the tail section of the scalie i use a 4/0 suicide. I've found running 2 soft lumo beads above the snelled hooks also works well. Then just run a running sinker setup on the mainline (choose the weight of the sinker according to what the surf/current is doing)
