Japanese knives

Crew,

Has anybody purchased any Japanese knives online or elsewhere?

 

I've always been a bit of a knife man but have never lashed out for quality, I think it might be time to grab 3 or 4 high quality damascus Jap knives but its hard to know where to look...

 

I know the style of knives i'm after so i'm more so looking for advice on where to find them?

 

Has anyone here purchased good quality Jap knifes that might have an opinion on where to get them?

 Hi have a couple of Kyocera ceramic knives, best I've ever used, but don't drop em.

 A really good site for jap knives is https://www.chefsarmoury.com/

An australian site so anything ordered is covered by OZ warranties etc and any problems can be delt with semi locally. Bit more expensive than overseas stuff but that is expected.

The biggest problem with going the internet ordering is you cant hold it and see if it fits you properly. That is what has stopped me in the past as it is a lot of money for a good knife and would be a shame if you get it and it just dosent feel right.

 I've ordered a few from multiple different series and makers on japanesechefsknife.com

Their website looks like it was made in a Grade 8 school project but it has good information once you navigate to something you like. Heaps of super steels that are hard to find anywhere else

Have a look at Everten , they have an online store here in Australia and sell all things kitchen, including every kind of knife you may want. My last purchase was a set of Tijiro chefs knifes , damascus steel.

Well worth a look at their online store....some great stuff and good prices.

Dale the ceramic sounds ok but i've got the mechanical wetsone for my blades and i'm pretty sure you can only sharpen hone ceramic with Diamond?

 Be careful using the mechanical sharpener on the Japanese knives. Since they're quite job specific grind shape and bevel angle can differ significantly knife to knife.

This is fine as long as the bevel angle set in your sharpener is the same as that of the knife you buy, if not you'll have to reshape the edge and reset the bevel which could remove a significant amount of steel depending on the situation
