Knife Sharpeners BY Ozzy (My Opinion for What its Worth)

I have tried alot of knife sharpeners including electric models, thats why I bought the blade sharpener,if you want a quick and fast edge on your knife then the Electric Sharpeners are the way to go for sure ,but if you have a quality knife and want it to last then the oil stone is the only way to go as it removes the least amount of metal, and what the blade sharpener does is keep the knife at a fixed angle so you get the best results using the oil stone, see link below.Thats my opinion for what it's worth.Cool

Lansky

Wed, 2009-07-22 15:11

I just got a Lansky with the diamond stones, they take off bugger all metal as well, and I got it for $57 aust landed here in 6 days from the USA.

I have an Arkansaw sharpening stone on my bench in my workshop ( now nearly 25 years old ), if I can't be bothered with the Lansky a couple of passes on the stone get's my knives back razor sharp, I have to sharpen up knives for a couple of chef's ( the lazy buggers) so the Lansky is great for doing 15 or so knives ever week.

As long as it's something you can get a precise angle with most systems work a treat.

What angle do you use for your blades I find around 19 degree's the best for most knives.

The lansky's are a great system and basically the same as the Easysharp and really the only difference is that the Easysharp is a larger version using the large stones and you can also buy the larger diamond stones as well.

I use a Lansky set also.

They work a treat, but I would rather an electric one for the time and energy savings.

im with you ozzy. electric

im with you ozzy. electric sharpeners are quick and easy but boy do they take off a lot of metal from your blade. i have been using the oil stones for about 25 years now and one i use now i have had for about 18-20 years now and use it every quite often(every day for about 8-10 of those years and about every 2-3 weeks since then) try get that sort of life from those electric ones.

i have got one of the lansky systems but in my opinion they are too fiddly and would rather use my full size stones.... not saying they arent good but for me i rather use full size.

maverick, if you used one of these ezesharp systems you would love it if you are doing 15 or so knives a week.... maybe you should ask ozzy if you can try his out and you will see what i mean.

so in my opinion forget the electric and go the manual ezesharp.... you will not look back and wont have to buy replacement stones every few years so in other words wont cost you anymore than the initial cost.... and looks like ozzy can get them at a very good price

p.s.      no i dont work for or have anything to do with ezesharp......lol
