Got 2 out of the freezer last week. Caught on the same day. One was mushy and virtually unedible the other was perfect. Did notice the mushy one when defrosted and split down the middle had a bit of brown colour through the flesh.
if there green from the freezer ?? you should never boil them as they will most often go mushy
ime they can tend to go mushy as well when boiled/ steamed
if you leave them for a period after they have died ,even in the fridge before cooking , it can be overnight etc
best to boil/steam them asap after drowning or cold chilling ,if you want to freeze them cooked , or if your a cold hearted bastard drop em in alive
I mostly freeze mine green now makes em more versatile to use later
bbqed , pasta/marinara & garlic cream sauce type dishes , cut and crumbed or battered deep fried etc
i freeze green ,was having the family over saturday so i defrosted and boiled 8 for 5 minutes ended up with 6 ok & 2 mushy ones ... the flesh didnt come off the shell easily & the shell was soft .

I only BBQ now frozen crays.
I only BBQ now frozen crays. They just don't boil that well after freezing. It possibly has something to do with the handling.

I have never really had the mush flesh even after frozen .
I freeze green, let thaw in fridge and then normally bbq but have asteamed and few and always seem pretty good !
