Ocean to Plate

The largest fish that I have cooked using this method.
Gilled and gutted...leave the scales on! They turn into tasty chips.

 Sure would turn out crispy. Would hate for a oil splash out when placing fish.

Good stuff yummo , we do all our skippy like that ( pla rad prik ) .. and the occasional scaled snapper might have to give that a crack next time and leave them on ( easy peasy )

 
Presume you had some mighty fine sauce to go with it ..

 Looks bloody great Pete. That's a nice deep wok you got there. I normally do that dish with black arse, or red snapper. My woks not big enough for a dhuie. Can you remember where you got your wok from? I would love one that big.

Just forget to scale the fish Chris....you had a hard day fishing......haha.

I used the sauce base from the sbs.com.au site.  Google Thai style deep fried fish...won't let me paste the link.

Wok and ladle from Trans Emporium in Northbridge....I used 6 litres of canola for the Dhuie.  Cool it overnight and scoop out and refill bottles for the next fish.....leaving the dregs for disposal.

Ive done a couple of black arse, pinkie and even a baldie.  The Dhuie was the best though.
